Ground Beef Recipes

Simple American Shepherds Pie

2 lbs ground beef1 onion, chopped2 cloves garlic, minced2 cups of vegetables: corn, peas or cubed carrots, or mixture of them1 can of beef gravysalt and pepper to taste3 cups mashed potatoes (home made or instant)

Place beef, onions, and garlic in the crock pot. Cook for 3 hours on high, or 5 hours on low.
Remove the beef with a slotted spoon and transfer into a bowl. Mix the vegetables and gravy with the beef.

Empty the fat from the crock pot basin. Return the beef mixture to crock pot.Spread mashed potatoes over the beef. Cook for 1 to 2 more hours.

Beef Taco Mixture

1 lb lean ground beef1 can refried beans with cheese1 small onion, diced1 diced chili pepper (optional)1 tsp ground cumin1 cup chunky salsa1 small can tomato sauce2 Sazon Goya seasoning packets with coriander and annatto (con culantro y achiote)salt and pepper to taste

Optional toppings: 

shredded lettuce, diced tomatoes, diced peppers, shredded cheese, salsa, sour cream, or guacamole

Place beef, can of refried beans, onion, pepper, cumin, salsa, tomato sauce and seasoning packets into crock pot. Stir well.

Cook on high for 4 hours or low for 6 hours. Taste; add salt and pepper as needed.
This mixture can be spooned into crunch or soft tortillas, or spread over tortilla chips for a taco salad. It also makes a great topping for baked potatoes or can be served over rice.

Autumn Soup

1 lb ground beef1 32-oz can of beef broth1 cup of water1 small onion, diced1 tomato, diced1 can kernel corn, drained1 medium potato, peeled and cubed1 turnip, peeled and cubed1 teaspoon barbecue seasoning mixsalt and pepper to taste

Brown beef in a skillet and drain fat. Add beef to crock pot with all other ingredients. Cook on high for 3 hours, or low for 5 hours. Serve with a crusty bread.

Beef and Broccoli Crock Pot Casserole

2 lbs lean ground beef2 cups broccoli, chopped1 can cream of broccoli soup3 oz shredded cheddar cheese1 clove garlic, mincedSalt and pepper to taste2 packages of Jiffy biscuit mix, prepared (follow box directions)

Put beef, broccoli, broccoli soup, cheese and garlic into the stoneware basin of a crock pot. Cook 3 hours on high, or 5 hours on low.Add salt and pepper to taste, and stir.

Remove the stoneware basin from the heater. Spread a thin layer of biscuit batter over the meat mixture. Place into a 425 degree oven until top of muffin mixture is golden brown. Scoop into plates and serve.
